The three-course dinner consists of:
Flat bread basket of salmon and creamed roe
Suovas – reindeer kebab – with potatoes
Parfait with Västerbotten cheese and cloudberry jam
Our souvas comes locally from Anders Skum in Ammarnäs who smokes the reindeer meat in the old-fashioned way.
The ‘almond’ potatoes come from Selet and the salmon from the curing-house Norums Fiskrökeri in Bygdeå.
