Whitefish caviar pate with mustardsauce and thinbread
Exquisite whitefish caviar combined with cream, onions, 
and choice seasonings

Cured char roulade
Cured char, with chef's dressing, rolled in soft northern 
Swedish thinbread

Reindeer canape

Cured and smoked reindeer tenderloin with goatbutter gravy and almond potatoes.
Thin-cut tenderloin on a bed of buttery gravy, served 
with lingonberries

Reindeer or moose served in a thinbread basked
Smoked reindeer or moose roast with salad and vegetables, 
served with goatbutter gravy or lingonberry sauce

SOUP

Lumberjack soup
Served with Swedish bacon, juicy-tender morels (if available), chanterelles, and polyporus ovinus mushrooms in a cream sauce

Broiled spit of reindeer, moose, deer, and other wild meats, if available. Served with juniper-berry sauce and baked potatoes

We use what mother nature offers--then we use our imagination 
to concoct this delicious stew

Creamed, thin-sliced reindeer meat served with pressed potatoes
Thin-sliced reindeer meat, mushrooms, onions, and lingon-berry sauce

Souvas with goatbutter gravy
A lappish dish with smoked, thin-sliced reindeer roast fried with 
onions and pressed potatoes

FISH

Cooked, cold salmon

Boiled salmon, served in its own juices together with dill-flavored mayonnaise, lemon, and almond potatoes

Sik to sik
Two whitefish filets, bedded in their own caviar, cream, 
and onions. Choice of potato.

Mountainlake char
Fried lappish char, simmered in dill and cream, served with 
almond potatoes. Mmmm..it's so good!

 Trout broiled in foil
Large, succulent trout’s, broiled and served with 
almond potatoes, dill, and lemon


DESSERT 

Wilderness parfait with whipped cream

Made from choice of fresh berries

Ice cream with warm cloudberryjam topping
